- 1/2 cup Sunflower oil
- 4 tbs Cumin seeds (partially grinded)
- 4 tbs Black pepper (partially grinded)
- 2 medium Fresh tomatoes
- 3 Green chilies
- 1 tbs Ginger garlic paste
- 3 tbs Yogurt
- 1/2 tsp Kashmiri chili powder
- 1 tsp Coriander powder
- 2 1/4 lb Chicken wings
- 1/2 tsp Pink salt
- 1 tsp Mint sauce
- Dried Kasuri Methi
- Lemon juice (from 1/2 lemon)
- Fresh coriander
Instructions
- 1.Heat 1/2 cup of sunflower oil in a pot.
- 2.Add 4 tablespoons of partially grinded cumin seeds to the hot oil.
- 3.Add 4 tablespoons of partially grinded black pepper to the oil.
- 4.Stir the cumin seeds and black pepper in the oil.
- 5.In a blender, combine 2 chopped medium tomatoes, 3 green chilies, 1 tablespoon of ginger garlic paste, and 3 tablespoons of yogurt.
- 6.Blend the mixture until it forms a smooth paste.
- 7.Pour the blended paste into the pot with the spices.
- 8.Stir the paste into the oil and spices.
- 9.Add 1/2 teaspoon of Kashmiri chili powder.
- 10.Add 1 teaspoon of coriander powder.
- 11.Continuously stir the mixture on low fire for 5 minutes, ensuring it does not stick or form lumps.
- 12.Continue stirring until the mixture becomes really thick and the oil starts surrounding the center of the paste.
- 13.Add 2 1/4 lb of chicken wings to the cooked masala, placing them evenly.
- 14.Add 1/2 teaspoon of pink salt to taste.
- 15.Mix the chicken with the masala on medium fire until it starts bubbling, ensuring the paste covers all the chicken.
- 16.Once it starts bubbling, lower the flame to medium-low, cover the pot, and allow it to cook for 30-40 minutes.
- 17.Once cooked, add 1 teaspoon of mint sauce.
- 18.Add dried Kasuri Methi.
- 19.Squeeze the juice of half a lemon into the pot.
- 20.Add fresh coriander for garnishing.
- 21.Stir all the added ingredients thoroughly into the chicken curry until well combined.
- 22.Serve the Zeera Chicken, ensuring it is not too dry and retains its paste-like consistency.
